Garden Fresh Green Soup

Celery, Zucchini, Broccoli + More



Ingredients

  • onion, chopped

  • 6 garlic cloves, chopped and set aside for 15 min

  • 1 bunch celery, chopped

  • 6 cups celery leaves

  • 1 1/2 bunches dandelion, cut up

  • 1 head broccoli, cut into florets and stems

  • 6 small zucchini, cut into 1” pieces

  • carrots, grated

  • 6 cups vegetable stock (1 1/2 cartons)

  • 1 cup cashews, soaked in boiling water for 30 min

  • Dried parsley, chives, 2 bayleave

  • Salt + pepper



Instructions

  • Saute onion for 5 min

  • Add garlic and saute for another 5 min

  • Add chopped celery and carrots and saute for 5 min

  • Add zucchini and broccoli stems and saute for 10 min

  • Add stock and spices. Bring to a boil and then simmer for 15 min

  • Add celery leaves and dandelion and mix through well

  • Then turn off the stove - dont overcook greens

  • Blend the pot of soup in a high speed blender with cashews



Notes

  • Serves 8

  • Use any bitter greens you have on hand

  • Leeks would be a nice addition to this too

  • Farro is a great to add too
