2 cups chopped parsley
1 cup chopped mint
1 bunch chopped scallions (green onions)
Sundried tomatoes, cut into strips
Kalamato olives, cut
Chopped cucumbers
Juice from 2 lemons
Salt + pepper
Optional: Olive oil
Instructions
Mix all of the above and set out for an hour or two for the flavors to blend
