Roasted Corn + Zucchini

This is a cinch to make + absolutely delicious



Ingredients

  • 2 cups frozen organic corn kernels (you can use fresh when in season)

  • 2 cups zucchini, diced into small pieces roughly same size as corn

  • 1/2 large red onion, diced

  • 1-2 cups chopped fresh parsley

  • 1 tsp sumac

  • 1 tsp sea salt

  • 1/2 tsp cumin

  • 2 Tbs olive oil

  • Green Sauce



instructions

  • Preheat oven on convection grill at 450ºF

  • Place all ingredients in a bowl and mix well

  • Spread mixture evenly on a baking tray and bake for 20-30 min (this depends on your oven)

  • Remove from the oven and pour green sauce on top

  • Enjoy as a side dish or scooped up with Baked Tortilla Chips
