Spring Cabbage Salad

Refreshing, super crunchy, lemony, garlicky is a must-have!



Ingredients

  • 1 small green cabbage (or half a large cabbage), thinly sliced or shredded

  • 3-4 Persian cucumbers, finely chopped

  • 2-3 celery sticks, finely chopped

  • 1 shallot, finely chopped

  • Handful of fresh dill, finely chopped

  • Handful of fresh mint, finely chopped

  • Optional: 1 jalapeño, seeded and finely chopped

  • Chopped walnuts or my Salad Crunchies

Dressing

  • 3-4 Tbs olive oil

  • 2 Tbs freshly squeezed lemon juice

  • 2-3 minced garlic cloves

  • 1 tsp salt

  • Dash of black pepper

  • Optional: (I add these)

  • 1 tsp mustard (I use Colman’s dry mustard)

  • 1 Tbs maple syrup



instructions

  • Place all the salad ingredients in a bowl

  • Add the dressing and mix well

  • Let it stand for an hour or more in the fridge

  • Garnish with nuts or crunch. Enjoy!
