1 small green cabbage (or half a large cabbage), thinly sliced or shredded
3-4 Persian cucumbers, finely chopped
2-3 celery sticks, finely chopped
1 shallot, finely chopped
Handful of fresh dill, finely chopped
Handful of fresh mint, finely chopped
Optional: 1 jalapeño, seeded and finely chopped
Chopped walnuts or my Salad Crunchies
Spring Cabbage Salad
Refreshing, super crunchy, lemony, garlicky is a must-have!
Ingredients
1 small green cabbage (or half a large cabbage), thinly sliced or shredded
3-4 Persian cucumbers, finely chopped
2-3 celery sticks, finely chopped
1 shallot, finely chopped
Handful of fresh dill, finely chopped
Handful of fresh mint, finely chopped

Dressing
3-4 Tbs olive oil
2 Tbs freshly squeezed lemon juice
2-3 minced garlic cloves
1 tsp salt
Dash of black pepper
Optional: (I add these)
1 tsp mustard (I use Colman’s dry mustard)
1 Tbs maple syrup
instructions
Place all the salad ingredients in a bowl
Add the dressing and mix well
Let it stand for an hour or more in the fridge
Garnish with nuts or crunch. Enjoy!
