Plant-based “Cheese” Spread

A winner as a dip, spread on sandwiches, mayo alternative



Ingredients

  • 1 heaping cup cashews, soaked in boiling water for 30 minutes*

  • Juice of 1 lemon

  • 2 tsps white miso, dissolved in warm water

  • 1/2 cup water (add more water if you would like a sauce instead of a spread)

  • 2 Tbs nutritional yeast

  • 1 tbs apple cider vinegar



Optional Extras

  • 2 tsps olive oil

  • Garlic powder

  • Onion powder

  • Fresh herbs



Instructions

  • Blend all ingredients

  • It will keep in the fridge up to a week



Notes

  • Makes about 2 cups

  • *No need to soak cashews overnight as is often suggested in recipes
