Chickpea Curry Burgers

Ingredients

  • 1 cup organic cubed potatoes or sweet potatoes

  • 1 1/2 cups cooked or 1 can chickpeas

  • 1 1/2 cups “riced” cauliflower

  • 1  cup cashews

  • 1 onion, roughly chopped

  • 4 garlic cloves

  • 1/4 cup ground flax seeds

  • 1/2 cup green onions, chopped

  • 1/2 cup fresh cilantro, chopped

  • 2 Tbs curry powder

  • 1 Tbs onion powder

  • 1 tsp salt

  • A few grinds of black pepper

  • Dash of cayenne pepper (optional)



Instructions

  • Preheat oven to 450)F

  • Grind cashews in food processor to a fine meal consistency

  • Add potatoes, onions and garlic and pulse until the potatoes are a rice-like consistency 

  • Add to this mixture the flax, green onions, cilantro, curry powder, onion powder, salt and pepper (and cayenne, if using)

  • Mix well together and make burger patties (I use the Cuisinart burger press)

  • Place on parchment-lined baking trays, bake for 15 min, flip and bake for another 15 min

  • Enjoy with Creamy Sunflower Curry Sauce
