White Bean + Cucumber Salad

Super fast + Super tasty Summer Salad



Ingredients

  • 1 can cannellini beans, drained

  • 2 small Persian cucumbers or 1 medium cucumber, diced

  • 4 scallions, chopped

  • 1/2 cup fresh parsley, chopped

  • 2 Tbs lemon juice

  • 1 Tbs olive oil

  • 1/4 cup mint, chopped

  • 2-3 garlic cloves, minced

  • 1 tsp flaky sea salt



Instructions

  • Mix all ingredients well and refrigerate covered for at least 1 hour
