5-minute English Muffin

Brilliant + super healthy muffin - gluten free



Ingredients

  • 1/3 cup rolled oats

  • 1 Tbs chia seeds

  • 1/2 tsp baking powder

  • 2 Tbs applesauce

  • 1 Tbs soy milk (or any milk of your choice


Instructions

  • Blend oats, chia and baking powder (I use a Nutribullet* for this)

  • Add applesauce and milk and mix well

  • Form into a patty about 4” in diameter

  • Microwave on high for 2 1/2 min

  • When cool, slice in half and either enjoy it like that or toast it


Notes

  • Makes 1 muffin

  • I have doubled the recipe and it works well
