Fattoush Salad

Fresh + zesty!



Ingredients

  • 1 container of ripe cherry tomatoes, chopped

  • 3 Persian cucumbers, chopped

  • 1 red onion, finely sliced

  • 1 cup Kalamata olives

  • 1 cup fresh parsley, chopped

  • 1 cup fresh mint, chopped

  • 4 cups chopped Romaine lettuce

  • 1 garlic clove

  • Juice of 1 lemon

  • 1/4 olive oil

  • Salt + pepper to taste

  • 1 pita bread cut into 1” pieces

  • Z’aatar spice



Instructions

  • Preheat oven to 350º

  • Spread pita pieces on a parchment-lined baking sheet

  • Spray with olive oil and bake for 15 min. Set aside

  • Blend together garlic, olive oil, lemon juice, salt and pepper

  • Combine all other ingredients and mix with dressing

  • Mix well and let it sit out for flavors to infuse

  • Just before serving add the pita pieces and sprinkle with z’aatar

  • Serve at room temperature
