Preheat oven to 350º
Spread pita pieces on a parchment-lined baking sheet
Spray with olive oil and bake for 15 min. Set aside
Blend together garlic, olive oil, lemon juice, salt and pepper
Combine all other ingredients and mix with dressing
Mix well and let it sit out for flavors to infuse
Just before serving add the pita pieces and sprinkle with z’aatar
Serve at room temperature

Ingredients
1 container of ripe cherry tomatoes, chopped
3 Persian cucumbers, chopped
1 red onion, finely sliced
1 cup Kalamata olives
1 cup fresh parsley, chopped
1 cup fresh mint, chopped
4 cups chopped Romaine lettuce
1 garlic clove
Juice of 1 lemon
1/4 olive oil
Salt + pepper to taste
1 pita bread cut into 1” pieces
Z’aatar spice
