Ingredients
The following ingredients are sliced very fine: (It does make a difference!)
Radicchio
Kale
Arugula
Romaine Lettuce or other lettuces
Collard Greens
Spinach
Fennel
Red onion, sliced very thin
Carrots, grated
Celery, chopped
Cucumbers, chopped
Avocado, diced or sliced
Loads of fresh herbs - whatever you have, but lots, chopped Basil, parsley, mint, dill
Dressing
Good white balsamic vinegar
Good olive oil - just a drizzle
Salt + pepper
Nuts/Seeds
Roasted in oven for 10-15 min at 350º
Add any or all just before serving
Slivered Almonds
Pumpkin Seeds
Sunflower Seeds
Sesame Seeds
Notes
Dress the salad about 20 min before serving so that flavors can permeate and serve at room temperature
If on hand I will also slice very fine and use:
Bok choy or tatsoi
Kohlrabi, grated
Pea shoots
Any other greens.
I also occasionally add:
Sliced sundried tomatoes
Shredded cabbage
Chickpeas
