Cool Cucumber Raita

Great accompaniment with curry



Ingredients

  • 4 small Persian cucumbers, roughly cut with skins on

  • 1 cup cashews, soaked for 30 min in boiling water

  • ½ tsp salt

  • ½ tsp ground cumin

  • 1 large clove garlic, roughly chopped

  • 2 Tbs lemon juice

  • 2 Tbs lime juice

  • ¾ cup water

  • ¼ cup chopped mint

  • 1 tsp dried dill



Instructions

  • Place all ingredients in a high-speed blender and blend until smooth

  • Place in fridge for a couple of hours for flavors to settle



Notes

  • Makes about 4 cups

  • The leftovers can be kept in fridge, covered for up to a week
