4 small Persian cucumbers, roughly cut with skins on
1 cup cashews, soaked for 30 min in boiling water
½ tsp salt
½ tsp ground cumin
1 large clove garlic, roughly chopped
2 Tbs lemon juice
2 Tbs lime juice
¾ cup water
¼ cup chopped mint
1 tsp dried dill

Ingredients

Instructions
Place all ingredients in a high-speed blender and blend until smooth
Place in fridge for a couple of hours for flavors to settle

Makes about 4 cups
The leftovers can be kept in fridge, covered for up to a week
