Lentil + Quinoa Salad with Sumac

Simple + filling dish infused with flavor + textures 



Ingredients

  • 1 1/4 cups dry lentils

  • 1 cup dry quinoa 

  • 2 cups fresh parsley, chopped

  • 1 1/2 cup fresh mint, chopped

  • 1 1/2 cups fresh cilantro, chopped

  • 1 bunch scallions, thinly sliced

  • 2-3 Tbs olive oil

  • Juice of 2-3 lemons

  • 1 heaped Tbs sumac

  • Sea salt

  • Freshly ground black pepper

  • Optional: 1 lb baby tomatoes, halved



Instructions

  • Cook lentils and quinoa according to package directions

  • Mix all ingredients well

  • Let sit for a couple of hours until the flavors have worked their way into the quinoa and lentils
