1 1/4 cups dry lentils
1 cup dry quinoa
2 cups fresh parsley, chopped
1 1/2 cup fresh mint, chopped
1 1/2 cups fresh cilantro, chopped
1 bunch scallions, thinly sliced
2-3 Tbs olive oil
Juice of 2-3 lemons
1 heaped Tbs sumac
Sea salt
Freshly ground black pepper
Optional: 1 lb baby tomatoes, halved
Lentil + Quinoa Salad with Sumac
Simple + filling dish infused with flavor + textures
Ingredients
1 1/4 cups dry lentils
1 cup dry quinoa
2 cups fresh parsley, chopped

1 1/2 cups fresh cilantro, chopped
1 bunch scallions, thinly sliced
2-3 Tbs olive oil
Juice of 2-3 lemons
1 heaped Tbs sumac

Instructions
Cook lentils and quinoa according to package directions
Mix all ingredients well
Let sit for a couple of hours until the flavors have worked their way into the quinoa and lentils
