Chopped Lentil Salad + Tahini Dressing You have to try this very easy, quick and healthy chopped salad. It is a favorite of mine and I make it all the time.Ingredients2 cups halved cherry tomatoes3 small Persian cucumbers1 red onion, chopped1 cup fresh parsley, chopped1 1/2 cups cooked lentils (I always keep a few jars of these on hand)Dressing2 Tbs olive oil2 Tbs water3 Tbs tahini 1 garlic clove2 Tbs lemon juice2 Tbs apple cider vinegar1 Tbs maple syrupSalt + pepper, to tasteInstructionsBlend the dressing ingredients and add to the rest of the salad ingredients and mix wellI do marinate the tomatoes in a little olive oil and salt for an hour or so to bring out the flavor before adding it but it is not essentialNotesThis is such a versatile salad and you can add any of your favorites e.g. avocado, cabbage, chopped red peppers

Dressing
2 Tbs olive oil
2 Tbs water
3 Tbs tahini

2 Tbs lemon juice
2 Tbs apple cider vinegar
1 Tbs maple syrup
Salt + pepper, to taste
Instructions
Blend the dressing ingredients and add to the rest of the salad ingredients and mix well
