Tomato Basil Relish
2 large ripe tomatoes or the equivalent in small ripe tomatoes, chopped
2 scallions (green onions) - green and white parts - chopped
2 Tbs fresh basil, finely chopped
2 Tbs extra virgin olive oil
1 Tbs sherry or red wine vinegar
Salt + freshly-ground black pepper
Eggplant
2 Tbs extra virgin olive oil
2 garlic cloves, minced
1 large or 2 small eggplants, skinned and cut into 3/4β thick rounds
